a large bunch of cilantro
whole black peppercorns
4 garlic cloves
4 T fish sauce
2 T white pepper
2 t soy sauce
bone in chicken thighs and legs
Take the cilantro roots, peppercorns and garlic cloves and crush to a paste, using a mortar or pestle. Mix in remaining ingredients. Rub marinade under & over chicken skin. Deep fry or Grill chicken.
